The term “etouffee” means “smothered”. This dish combines Cajun sausage, crawfish tails,
onions, peppers, celery, tomatoes, and garlic all simmered in a rich sauce,

A grilled Chilean Salmon fillet glazed with toasted sesame ginger sauce,
